Cuban Roast Beef

Ingredients:
4 ozs Smoked ham, chopped fine
4 ozs Cooked bacon, crumbled finely
1 Onion, minced
1 oz Capers, minced
3 Garlic cloves, minced
2 ozs Green olives, coarsely chopped
1 T Green chiles, chopped
3 lb Eye of round beef roast
Salt & pepper to taste
2 ozs Bacon fat
8 ozs Beef stock
4 ozs Tomato sauce
1 T Vinegar
Cooking Instructions:
Mix the first 7 ingredients to make a stuffing.



Make an incision 1 1/2" to 2" deep along the length of the roast.



Stuff the stuffing into the incision. Salt and pepper the roast.



Brown the roast on all sides in bacon fat in a large heavy casserole.



Add the rest of the ingredients and cook in the oven for 2 1/2 hours at 400F degrees. Add beef stock as needed to replace evaporated juices. Baste roast occasionally.
