Ingredients

12 ounces tenderloin, beef
salt and pepper
1/2 teaspoon mustard powder
2 tablespoons shallots, minced
4 tablespoons butter

1 1/2 Teaspoons worcestershire sauce
1 tablespoon fresh lemon juice
1 tablespoon parsley, minced
1 tablespoon fresh chives, or green onions, chopped

Directions

1. Pound steaks to 1/4" thickness. Sprinkle with salt & pepper on both sides. Combine 2 tablespoons butter & mustard to skillet. Cook over medium heat until sizzling. Add steak & shallots. Fry steaks 1 minute on each side.



2. Place steaks on dinner plates. Quickly add 2 more tablespoons butter, Worcestershire sauce & lemon juice to pan drippings.



3. Cook over high heat until syrupy. Stir in parsley & chives. Pour over steaks.
