Sausage & Veggie Popover

Ingredients

1 tablespoon oil
3/4 lb. polish sausage, sliced
chili powder to taste
1/2 teaspoon oregano, crushed
1/2 teaspoon garlic salt
1/4 ground cumin
1 1/2 cups zucchini, sliced
1 cup mushrooms, sliced
1/2 cup onion, chopped
1 tablespoon butter
2 whole eggs
3/4 cup almond flour
3/4 cup half & half
1 cup Monterey Jack cheese, shredded
1/8 cup green onion, chopped

Directions

Pre-heat oven to 400 F

Place butter in 9" pie plate, and place in oven to melt, remove when melted.

In a skillet, add the oil, and saute veggies until just done. Add sausage and cook until heated through. Stir seasonings into mixture.



Beat until smooth: eggs, almond flour, and hal& half. Pour batter into pie plate. Drain any juice from the sausage mixture, then mound in the center, to within 1" of the edge.



Bake uncovered for 20 minutes, sprinkle with shredded cheese.



Bake an additional 10 minutes, then garnish with the chopped onions.

Additional Information

This recipe doubles easily in a 9x13 casserole dish. Use any combination of veggies you like (keep track of the carbs!) Yellow squash, bell peppers, etc. This is great for using the extra veggies that you don't know what to do with from your garden!

I've also made this with different meats...hamburger, steak strips, chicken, and my favorite...bacon!
