Giblet Gravy

Ingredients

Turkey or chicken giblets
Water
2 Stalks celery with leaves, chopped
1 Medium onion, sliced

1 t Salt
1/2 t Pepper
3 T Drippings from roasted turkey or chicken
Heavy cream/water
2 t Xanthan gum

Directions

In medium saucepan, cover giblets with water.



Add celery, onion, salt, and pepper.



Simmer 1 to 2 hours or until giblets are tender. Remove giblets from pan. Reserve 2 cups of giblet broth, if less than 2 cups in pan add cream or water to make 2 cups.



Remove turkey from roasting pan and reserve 3 tablespoons drippings.



Add turkey drippings to saucepan. Stir in xanthan gum. Cook over low heat until smooth, stirring constantly. Add 2 cups giblet broth to drippings. Cook until mixture simmers and thickens, stirring constantly.



Chop giblets and add to gravy if desired.



Season to taste with salt and pepper.
