Apple Hazelnut Stuffed Chicken Breasts

Ingredients

4 Large chicken breasts (4 lbs)
1/2 t Salt
1/4 t Pepper
2 t Butter, melted
Fresh thyme sprigs for garnish

APPLE HAZELNUT STUFFING

1/2 C Hazelnuts, chopped
2 Granny smith apples, peeled, cored, and chopped
6 ozs Chevre cheese, softened

Directions

Heat oven to 375F degrees. Grease square pan 9 X 9 X 2 inches.



Loosen skin from chicken breasts by inserting fingers between skin and meat. Gently separate in center but leave skin attached at the ends.



Prepare apple hazelnut stuffing. Mix all ingredients together.



Spread 1/4 of the stuffing evenly between meat and skin of each chicken breast. Smooth skin, tucking under loose areas. Place chicken, skin sides up in pan. Drizzle with melted butter.



Bake uncovered 45 to 55 minutes until juice of chicken is no longer pink when centers of thickest pieces are cut.



Garnish with thyme sprigs.
