Pork Cider Stew

Ingredients

3 lbs Pork loin, cut into 1 inch cubes
2 T Olive oil
2 Garlic cloves, minced
2 C Prepared Sipper Sweets apple cider mix (from dietlowcarb.com store)
1 1/2 C Water
4 Medium carrots, cut into 1/2 inch slices

2 C Turnips, peeled, and cubed
1 T Salt
2 Cinnamon sticks
2 Whole cloves
1 (16 oz) jar pearl onions, drained
2 t Xanthan gum

Directions

In Dutch oven or stockpot, brown pork in hot oil over medium-high heat. Stir in garlic, cook 2 minutes to blend flavors. Stir frequently.



Add 2 cups prepared sipper sweet apple cider, water, carrots, turnips, salt, cinnamon sticks and cloves, stir. Reduce heat and cover. Simmer 40 to 45 minutes until vegetables are tender.



Remove cinnamon sticks and cloves. Add onions.



In a small bowl combine xanthan gum and 1/4 cup of prepared sipper sweets apple cider. Stir into stew.



Cook over high heat until mixture thickens, stirring constantly.
