Standing Rib Roast

Ingredients

4 to 6 lb Standing Beef rib roast
Salt to taste
Pepper to taste


Directions

Heat oven to 325F degrees.



Place roast, fat side up on rack in shallow roasting pan.



Insert meat thermometer so bulb reaches center of the thickest part of meat but does not rest in fat or on bone.



Roast at 325F degrees for 2 to 4 hours or until of desired doneness.*



For ease in carving, let roast stand covered 10 to 15 minutes to set juices.



To carve this tender roast, slice from the outside toward the rib bone and then cut along the bone to remove the slice of meat.

Additional Information

*Roast meat to 140F degrees for rare, 160F degrees for medium and 170F degrees for well-done.
