Holiday Citrus Punch

Ingredients

1 pint Low carb vanilla ice cream, softened (Breyer',s Carb Smart is good)
Raspberries
1 Tub Crystal light raspberry ice mix
1 Tub Crystal light pink lemonade mix

2 C Cold water
1/4 C Lime juice
3 (28 ozs) bottles diet ginger ale, chilled

Directions

Line 9 inch square baking dish with parchment paper.



Spread ice cream evenly into prepared dish. Freeze until firm.



Meanwhile, place baking sheet in freezer to chill.



Remove ice cream from baking dish. Using cookie cutters, cut out holiday shapes from the ice cream. Transfer to chilled baking sheet. Press a raspberry into center of each cutout and freeze cutouts until solid.



Combine crystal light mixes, water and lime juice in large punch bowl.



Just before serving, pour in the diet ginger ale.



Float ice cream cutouts in punch.
