Ingredients

3 Eggs, slightly beaten
1/3 C Splenda granular
Dash of salt
1 1/4 C Heavy cream mixed with 1 1/4 cups water
1 t Vanilla
1 C Hot very strong coffee or espresso coffee

1/2 C Brandy
1 C Heavy cream (to whip)
1 T Brown sugar twin
LC Chocolate bar to make shavings for garnish
Ground cinnamon for garnish

Directions

Mix eggs, splenda, and salt in heavy 2 quart saucepan. Gradually stir in cream/water mixture. Cook over low heat 15 to 20 minutes, stirring constantly just until mixture coats a metal spoon. Remove from heat.



Stir in vanilla. Mix coffee and brandy. Gradually stir coffee mixture into custard mixture, keep warm.



Just before serving, beat whipping cream and brown sugar twin in chilled small bowl with electric mixer on high speed until stiff. Gently stir 1 cup of the whipped cream into custard mixture.



Pour eggnog into mugs. Top with dollops of remaining whipped cream. Sprinkle with chocolate shavings and ground cinnamon.



Serve immediately.
