Low Carb Enchiladas

Ingredients

2 Lbs Chicken cooked
2 8ozCream Cheese cut in cubes
1 lb 13oz can enchilada sauce
1 bunch of scallions chopped
3 Tablespoons of oil
2 4 oz can diced green chiles
3-4oz can chopped black olives
21/4 c. shredded sharp cheddar
2 bags 10 count LC Tortillas

Directions

Heat oven to 400 degrees in a 9x13 pan pour just enough enchilada sauce to barely cover the bottom. In a separate pan saute onions then add your cooked chicken, cubed cream cheese, 2 Tablespoons of enchilada Sauce and Green Chile. Cook at medium heat until cream cheese is melted and all ingredients is mixed will. in just a small amount of oil heat the tortilla till plyable and add two tablespoons of mixture. Dont meke little enchiladas one of mine is enough for dinner! Keep rolling like that until your pan is full. over the top put the remaining enchilada sauce and then top with Cheese. Cook at 400 degrees for 15 - 20 minutes until they are heated through.
