Shrimp Zingers

Ingredients

2 C Finely chopped cooked shelled shrimp
1/2 C Almond flour
3 T Finely chopped red bell pepper
3 T Finely chopped green onions
1 T Minced fresh parsley

3 t Fresh lemon juice
2 1/4 t Tabasco sauce
2 t Cajun seasoning
1/2 t Salt
1 Egg, slightly beaten
1 C Crushed pork rinds
2 C Canola oil

Directions

In a medium bowl combine first 9 ingredients, ending with salt. Blend well.



Add egg and blend until thoroughly combined. Mixture will be sticky.



Shape mixture into 12 atick-shaped pieces. Gently roll each piece in the crushed pork rinds.



In a large skillet, heat oil to 325F degrees.



Gently place shrimp sticks into oil and fry until crisp and golden brown.



Drain on paper towels.



Serve with your favorite dipping sauce and a squeeze of lemon.
