Mocha Macadamia Nut Muffins

Ingredients

1 1/4 C Almond flour
1 C Splenda granular
2 1/2 T Unsweetened cocoa powder
1 1/2 t Baking soda
1/4 t Salt
2 t Lemon juice
2/3 C Heavy cream

3 T Butter, melted
1 Egg, beaten
1 T Instant coffee granules, dissolved in 1 T hot water
3/4 t Vanilla
1/2 C Coarsely chopped macadamia nuts

Directions

Place 2 teaspoons lemon juice into 2/3 cup heavy cream and stir. Let stand 5 minutes.



Preheat oven to 400F degrees. Grease 12 (2 1/2inch) muffin cups.



Combine almond flour, splenda, cocoa, baking soda and salt in large bowl.



Whisk together heavy cream mixture, butter, egg, coffee mixture, and vanilla in small bowl until blended.



Stir liquid mixture into flour mixture just until moistened.



Fold in nuts.



Spoon evenly into prepared muffin cups.



Bake 13 to 17 minutes or until toothpick inserted into centers comes out clean. Cool in muffin pan on wire rack 5 minutes.



Remove from pan and cool on wire rack 10 minutes.
