Ham & Cheese Frittata

Ingredients

1 T Vegetable oil
1 C Red onion, chopped
1/2 C Bell pepper, chopped
1 t Minced garlic
1 C Cooked ham, chopped
4 Eggs
3 Egg whites

2 C Shredded Smoked Cheddar cheese
2 t Dried tarragon
1/2 t Salt
1/2 t Fresh cracked black pepper
2 Plum tomatoes, thinly sliced

Directions

Preheat broiler.



In large broilerproof skiller heat oil over medium high heat.



Add the onion, bell pepper and garlic. Saute for 5 minutes. Stir in the ham and cook 3 minutes more.



In a medium bowl whisk 4 whole eggs with the extra egg whites until foamy. Fold in 1/2 cup of cheese, the tarragon, salt, and black pepper. Pour over the vegetable/ham mixture.



Reduce the heat and cook uncovered for 6 minutes or just until the egg mixture is set around the edges. Arrange the tomatoe slices on top of the fittata. Sprinkle with the remaining cheese.



Slide the skillet under the broiler for 1 minutes or until the frittata is set in the center.




Additional Information

Choose a heavy skillet, such as cast iron for even cooking.
