Maple Cranberry Pork Chops

Ingredients

4 Center cut pork chops, 1/2 inch thick
1 C Dry red wine
1/2 C Sugar free maple syrup
1/2 C Cranberries, cut in half
1 t Xanthan gum

Directions

Spray large skillet with cooking spray.



Heat skillet over medium high heat. Add pork chops, cook 5 minutes per side until browned and pork is barely pink in center. Remove from skillet and keep warm.



Add wine, syrup, and cranberries to skillet. Cook and stir over medium high heat 6 minutes.



Stir in xanthan gum. Cook and stir about 1 minute until thickened and clear.



Reduce heat to medium, return pork chops to skillet, spoon sauce over and simmer 3 minutes.
