Holiday Turkey with Apple Pecan Stuffing

Ingredients

1/4 C Butter
2 Stalks celery, chopped
1 Onion, Chopped
1 Can (10 1/2 oz) Chicken broth
1 Loaf low carb bread of choice

1 Granny smith apple, cored and chopped
1 1/2 C Pecans, chopped
1 (12 to 14 lb) Turkey
Vegetable oil

Directions

FOR STUFFING:



Dry the bread slices in a 225-degree oven until brittle but not brown, 30 to 40 minutes. Then cut them into cubes.



In a large saucepan over medium heat, heat butter. Add celery and onion and cook until tender. Add broth. Heat to a boil. Remove from heat. Add dried bread cubes, apples, and pecans. Mix lightly.



Remove package of giblets and neck from turkey cavity. Rinse turkey with cold water and pat dry. Spoon stuffing lightly into neck and body cavities (bake any remaining stuffing in covered casserole dish or crockpot). Fold loose skin over stuffing. Tie ends of drumsticks together. Place turkey breast side up, on rack in shallow roasting pan. Brush with oil. Insert meat thermometer into thickets part of meat, not touching bone.



Roast at 325F degrees for 5 hours or until thermometer reads 180F degrees, drumstick moves easily and center of stuffing reaches 165F degrees, basting occasionally with pan drippings. Begin checking doneness after 4 hours roasting time. Allow turkey to stand 15 minutes before slicing.
