Stroganoff Style Chicken

Ingredients

2 T Olive oil
2 lbs Boneless/skinless chicken breasts, cut into strips
2 C Sliced mushrooms
1 Onion, chopped
4 ozs Cream cheese, softened

4 ozs Heavy cream
2 ozs water
2 t Chicken boullion
1/2 C Sour cream
1/4 C Water
4 C Prepared spaghetti squash

Directions

In medium skillet over medium-high heat, heat half the oil. Add chicken in 2 batches and cook until browned, stirring often. Set chicken aside.



Reduce heat to medium. Add remaining oil. Add mushrooms and onion, cook until tender.



Combine 2 ozs water, cream, cream cheese, and chicken boullion in a bowl. Microwave until melted together. Stir until smooth.



Add cream cheese mixture, sour cream and additional 1/4 cup water. Heat to simmer. Return chicken to pan and heat through.



Serve over spaghetti squash. Sprinkle with paprika.
