Southwestern Jalapeno Stuffing

Ingredients

1/4 C Butter, melted
1 1/2 C Celery, chopped
1 Onion, Chopped
1 C Cilantro, chopped
1 T Garlic, chopped
1/2 t Ground cumin
1/2 t Chili powder
1 lb Chorizo sausage

1 C Chicken broth
1 Loaf low carb bread of choice
2 Jalapenos, seeded and chopped fine
2 Eggs slightly beaten

Directions

Dry the bread slices in a 225-degree oven until brittle but not brown, 30 to 40 minutes. Then cut them into cubes.



Preheat oven now to 325F degrees.



In place bread cubes in a large bowl.



In large skillet, over medium high heat, saute sausage, celery, and onion until sausage is cooked thoroughly and vegetables are tender. Add cilantro and saute 2 minutes more.



Combine sausage mixture with bread cubes and mix well.



Add remaining ingredients and mix well.



Spoon stuffing into lightly greased casserole dish.



Bake covered at 325F degrees 45 to 50 minutes.
