Caramel Tortilla Pie

Ingredients

2 C Pecan pieces
1/2 C Butter
1 1/4 C Brown sugar twin
1/2 C Heavy cream

1 1/2 t Cinnamon
8 Low carb tortillas
1 t Xanthan gum
Low carb vanilla ice cream

Directions

Preheat oven to 350F degrees.



Spray 15 X 10 X 1-inch baking pan with nonstick cooking spray.



In medium saucepan, combine pecan pieces and butter. Cook and stir over medium heat until butter is melted and pecans are toasted. Remove from heat.



Stir in brown sugar twin, heavy cream, xanthan gum, and cinnamon.



Place one tortilla on sprayed pan.



Spread heaping 1/3 cup pecan mixture evenly over tortilla. Repear layers two more times. Top with a 4th tortilla.



Make another stack on same baking pan uisng remaining 4 tortillas adn pecan mixture.



Bake at 350F degrees for 15 minutes.



Cool slightly. Cut into wedges and top with low carb vanilla ice cream.
