Horseradish-Scallion Crusted Turkey Tenderloin

Ingredients

3/4 C Mayonnaise, divided
3 T Horseradish, divided
1 lb Turkey tenderloins
1/2 C Crushed pork rinds
4 T Green onions, sliced
4 T Fresh parsley leaves, chopped

Cooking spray
1 T Dijon mustard
1/4 t Paprika
1/2 C Heavy cream

Directions

Preheat oven to 425F degrees.



Combine 1/4 cup mayo and 2 T horseradish. Spread on the tenderloins. Combine pork rinds, green onions, and parsley. Roll tenderloins in crumb mixture.



Place coated tenderloins on baking sheet coated with cooking spray. Bake 35 to 40 minutes.



In a small bowl combine cream, remaining mayo, horseradish, mustard, and paprika. Serve over sliced tenderloins.
