Southern Stuffing

Ingredients

1 Loaf low carb bread of choice
1 lb Country ham, cubed
1 Stick butter
2 Onions, chopped
4 Ribs celery, chopped

3 T Garlic, minced
1/2 C Fresh parsley, chopped
1/2 C Green onion, chopped
2 t Dried sage
1 t File gumbo powder
1 C Chicken stock

Directions

Dry the bread slices in a 225-degree oven until brittle but not brown, 30 to 40 minutes. Then cut them into cubes.



Preheat oven to 425F degrees.



Transfer bread cubes to bowl.



Saute ham in a skillet over medium heat until browned. About 5 to 10 minutes. Transfer ham to bowl with bread cubes.



In same skillet melt butter. Add onions, and celery to skillet. Saute until soft about 10 minutes. Combine vegetables, herbs, spices, with bread/meat mixture. Add just enough stock to moisten bread mixture.



Pack the neck and cavity loosely with stuffing, folding the neck skin under and fastening with a skewer.



For a stuffed bird, roast turkey at 425F degrees for 30 minutes, then turn oven down to 325F degrees and roast bird for 20 minutes per pound until temperature of bird on meat thermometer reaches 180F degrees.



For loose stuffing, place in casserole dish, drizzle with stock, cover and bake for 1 hour. Uncover and bake an additional 1/2 hour.
