Spinach-Ricotta Stuffed Turkey

Ingredients

16 - 20 lb Turkey
8 (10 oz) Frozen spinach, thawed and drained well
8 T Olive oil
4 Eggs

3 C Ricotta cheese
2 C Parmesan cheese
1 t Ground nutmeg
Salt
Pepper

Directions

Preheat oven to 325F degrees.



Remove giblets and rinse turkey, pat dry.



In a saute pan, cook spinach with olive oil until tender. Drain again until dry.



In bowl combine all ingredients and mix well.



Stuff turkey cavities loosely.



Bake in on rack in shallow roasting pan at 325F degrees until meat thermometer inserted into thickest part of thigh not touching bone reads 180F degrees. About 4 1/2 hours.
