Xanders Green Bean Casserole

Ingredients

3 T Butter
1 t Salt
1 t Splenda
1/2 C Onion, chopped

1 C Sour cream
3 (15 oz) Cans green beans, drained
2 C Cheddar cheese, shredded
1/4 Bag pork rinds, crushed
1 t Xanthan gum

Directions

Preheat oven to 350F degrees.



Combine 2 tablespoons butter and xanthan gum in pan over low heat until butter is melted and mixture is blended well. Remove from heat.



Stir in salt, splenda, onions, sour cream.



Stir in beans.



Place mixture in shallow 2 quart casserole dish.



In a small bowl, toss together pork rinds and remaining butter.



Top beans with cheese and follow with pork rind crumbs.



Bake for 30 minutes until cheese is bubbling.
