Broccoli with Onion-Jack Sauce

Ingredients

2 T Butter
2 C Onion chopped
1 1/2 C Heavy cream
1 C Jack Cheese, shredded

3 lbs Fresh broccoli, cut into bite sized pieces
1 t Xanthan gum

Directions

Melt butter in saucepan over medium heat. Add onion and cook until tender.



Stir in xanthan gum.



Add cream and cook and stir until sauce comes to a simmer (do not boil). Simmer 2 minutes. Stir in cheese until it melts. Season with salt and pepper.



Meanwhile, cook broccoli until crisp tender. Drain well. Place in shallow serving dish adn top with onion jack sauce.
