Ingredients

1/2 C Almond flour
1 t Salt
1 t White pepper
1 t Thyme, crushed
4 Large boneless/skinless chicken breasts
2 T Olive oil
1/2 C Dry white wine
1/2 C Shallots, chopped

4 ozs Finely diced prosciutto
1 C Heavy cream
1/4 t White pepper
2 T Butter
2 Cups mixed wild mushrooms, try morel, shitake, crimini or brown mushrooms.
4 ozs Brie cheese

Directions

Combine almond flour, salt, pepper, thyme, lightly dust chicken breasts with mixture.



Add oil to hot skillet, brown chicken on both sides and cook until chicken is no longer pink and juices run clear.



Meanwhile, combine white wine, shallots and prosciutto in another skillet, cook and stir until liquid is reduced by half. Add heavy cream adn white pepper, cook and stir over medium high heat until slightly thickened.



When cooked through, remove chicken from skillet and set aside. Add butter to skillet, saute mushrooms until tender.



Arrange browned chicken in skillet with mushrooms, clice brie cheese and divide evenly over top of each breast. Cover skillet and cook 3 to 5 minutes until brie is melted. Spoon cream sauce over chicken and mushrooms.
