Autumn Pot Pie

Ingredients

DOUGH:

1 C Almong flour
1 t Ground ginger
1 t Grated lemon zest
1/2 t Salt
3 T Cold water

FILLING:

3 C Chopped, cooked chicken or turkey

2 C Chicken broth
1 C Frozen pearl onions, steamed until tender
1 C Frozen sliced carrots, steamed until tender
1 Granny smith apple, cored and cut into small chunks
1/4 C Cranberries, chopped
2 T Butter
2 T Lemon juice
1 T Grated fresh ginger
1/2 t Black pepper
1/8 t Salt
1 1/2 t Xanthan gum

Directions

In large bowl, combine almond flour, ginger, lemon zest and salt. With a pastry blender cut in the butter until mixture resembles coarse crumbs. Sprinkle 3 tablespoons of water over the mixture and toss with fork. The dough should be just barely moistened, enough to hold together when formed into a ball. Add more water if needed. Form the dough into a flat disk and wrap in plastic. Refrigerate while making the filling.



Preheat oven to 450F degrees.



Steam onions and carrots until crisp tender, drain, set aside.



In large saucepan over medium heat melt 2 T butter, whisk in ginger. Reduce heat to low and gradually whisk in chicken broth. Stir in xanthan gum until thickened.



Add onions, carrots, apples, cranberries, lemon juice, and chicken or turkey. Let simmer for 5 minutes, stirring constantly.



Season with salt and pepper.



Spoon filling into deep, 10 inch ceramic or glass pie dish.



On a lightly almond floured surface, roll douth out to a circle about 12 inches in diameter. Lay the dough over the top of the pie dish. Trim and crimp edges. Use a small knife to cut several slits in the center of pie (you can also make decorative cutouts in crust before setting it on top of the pie). Set teh pie on a baking sheet and place in oven on middle rack. Bake for 15 minutes. Reduce heat to 400F degrees adn continue baking for additional 20 minutes until pie bubbles around edges and top is nicely browned.
