Blackened Chicken Strips with Cajun Sauce

Ingredients

1 T Paprika
2 t Garlic powder
2 t Onion powder
1/2 t Black pepper
4 Boneless/skinless chicken breasts

4 T Onion, minced
2 Cloves garlic, minced
4 C Chicken broth
2 Tomatoes, seeded and chopped
1 T Fresh basil, chopped
1 T Fresh tarragon, chopped
Salt to taste
Pepper to taste
1 t Xanthan gum

Directions

Mix paprika, garlic powder, onion powder, and pepper, set aside.



Place chicken breasts between two pieces of wax paper adn pound with a meat mallet to flatten. Moisten chicken with water and rub with cajun spices (reserve 1/4 t of the spice mix).



Sray a very hot skillet with cooking spray. Fry breasts for 4 to 8 minutes or until done. Remove from pan and slice into thin strips, set aside.



Saute onion and grlic in a small saucepan sprayed with cooking spray until soft. Add broth, tomatoe, fresh herbs, and reserved cajun spices. Simmer for 8 minutes, Season with salt and pepper to taste. Add xanthan gum and stir until thickened.



Arrange chicken on a platter and drizzle with sauce.
