Desert Country Meatloaf

Ingredients

1/4 C Boiling water
1 Tomatoe, chopped
1/4 C Atkins corn muffin mix
3 Cloves garlic, crushed
2 lbs Ground beef
2 Eggs
1 C Green onion, sliced

1 (4 oz) can Green chile peppers
2/3 C Fresh cilantro, chopped
2 Jalapeno peppers, seeded and chopped
1 1/2 t Salt
1/2 t Black pepper
1 T Atkins corn muffin mix

Directions

Preheat oven to 375F degrees.



In a large bowl combine boiling water, tomatoe, garlic, and atkins corn muffin mix. Mix well then set aside for 10 minutes.



Add the ground beef, eggs, green onions, chile peppers, cilantro, jalapenos, salt and pepper to the tomatoe mixture. Mix well.



Form into a loaf and place into a shallow baking dish. Sprinkle with 1 T atkins corn muffin mix. Bake in the oven 50 minutes to 1 hour until desired degree of doneness is reached.



Let stand for 10 minutes before slicing.
