Tex Mex Lasagna

Ingredients

1 T Olive oil
2 lbs Ground beef
1 Red bell pepper, seeded & chopped
1 Green bell peper, seeded & chopped
1 Onion, chopped

1 (4 oz) Can green chiles
1 Pkg Taco seasoning mix
1 Jar (16 oz) Smooth taco sauce, divided
10 Low carb tortillas
3 C Shredded Pepper jack cheese

Directions

Preheat oven to 375F degrees.



Grease 13 X 9-inch baking dish.



Heat oil in large skillet. Add ground beef. Cook, stirring and breaking up large pieces until browned. Stir in bell peppers, onions, chiles, and seasoning mix. Reduce heat to low and cook stirring occasionally until vegetables are slightly tender.



Spread 1/2 C taco sauce onto bottom of prepared baking dish. Cover with 5 tortillas. Spread with half of meat mixture and another 1/2 C taco sauce. Sprinkle with 1 1/2 cups cheese. Repeat with remaining ingredients.



Bake for 25 to 30 minutes until heated through and cheesse is melted.
