Chicken with Tarragon Cheese Sauce

Ingredients

2 T Olive oil
2 lbs Boneless/skinless chicken breasts
1/2 C Shallot, finely chopped
12 ozs Heavy cream

1/2 C Whipped cream cheese
1/3 C Parmesan cheese
1 1/2 t Dried tarragon
1 1/2 t Salt
1 1/2 t Black pepper

Directions

Heat oil in large skillet. Add the chicken and cook until chicken is no longer pink. Remove from skillet, keep warm.



Add shallots to skillet, stir, scraping up brown bits on bottom of skillet. Cook stirring constantly until shallots are tender. Whhisk in cream, cream cheese, parmesan cheese, tarrago, salt and pepper. Cook whisking constantly until sauce thickens slightly. Stir in chicken and heat until heated through.
