Banana Beignets

Ingredients

3/4 C Almond flour
2 T Splenda granular
2 t Splenda granular
1 t Baking powder
1/2 C Heavy cream
2 T Heavy cream
1/4 C Beer
1 Egg
Oil for deep frying

1 T Banana extract
Splenda for dusting
Mint leaves for garnish

CARAMEL SAUCE:

1 C Heavy cram
1/2 C Splenda granular
1 1/2 T Bourbon

Directions

BEIGNETS:



Mix almond flour, splenda, and baking powder in bowl. Add cream, beer, banana extract, and egg. Stir until smooth.



Heat oil in deep fryer to 375F degrees. Working in batches, Drop tablespoonfuls of batter into hot oil. Cook until golden brown. Drain on paper towels.



CARAMEL SAUCE:



Bring cream to simmer in saucepan.



Cook splenda in anothe saucepan over low heat, swirling pan occasionally until browned.



Gradually stir hot cream into browned splenda (it will bubble vigorously). Cook until thickened. Add bourbon. Serve sauce hot with beignets for dipping.
