Squashed Potatoes

Ingredients

3 crookneck squash, peeled and sliced in rounds 1 stick of butter
1 large baking potato (baked , peeled, and smashed)
4 Tablespoons Sour Cream Cheddar cheese Salt and Pepper

Directions

Saute squash rounds in butter until mushy. Bake potatoe and peel. Measure 1 1/2 cups of potatoe pulp into and a casserole dish, cream with squash and butter mixture. Add Salt and Ground Pepper to taste. Garnish with grated cheese.
