Peanut Brittle

Ingredients

1 1/2 C Peanuts
1 C Maltitol
1/2 C Maltitol syrup
Pinch of salt

1 T Butter
1 t Vanilla
1 t Baking soda

Directions

Grease a baking sheet and set aside.



In a 1 quart oven proof glass bowl mix together peanuts, salt, maltitol and maltitol syrup. Microwave on high for 7 minutes. Mixture should be bubbly and liquid should be starting to brown.



Stir in butter and vanilla and cook another 2 to 3 minutes.



Take it out of microwave and quickly stir in the baking soda. It will foam up. Pour immediately onto the cookie sheet and stir peanuts around to evenly distribute them.



Cool to room temperaure, then put in the freezer to cool.



Break into pieces and store in airtight container in the freezer.
