Chicken Schnitzel

Ingredients

8 Chicken breasts
3 C Finely crushed pork rinds
1 C Almond flour
1/4 C Parmesan cheese
1 Large pinch dried basil, crushed
2 Eggs beaten well with 1/8 cup water
1 Large pinch dried thyme, crushed
2 T Capers
Fresh parsley
Juice of 1 lemon

Directions

Pound each chicken breast between plastic wrap until very thin.



Mix pork rinds, almond flour, parmesan cheese basil and thyme together in a bowl.



Season chicken with salt and pepper.



Dip each chicken breast into egg wash, then dredge in almond crust mixture.



Saute in oil until golden brown.



Sprinkkle with capers, lemon juice, and parsley.
