Greek Stuffed Mushrooms

Ingredients

23 Large Mushrooms, stemmed
10 ozs Frozen chopped spinach, thawed, drained very well
1/2 C Parmesan cheese

4 ozs Feta cheese, rinsed and crumbled
1/2 C Green onion, chopped
1/2 C Parsley, finely chopped
Dash salt

Directions

In mixing bowl combine spinach, cheeses, onion, parsley and salt to taste. Mix well.



Mound mushroom caps high with spinach mixture.



Arrange on plate and microwave at high approximately 3 to 4 minutes.



The spinach mixture may be formed into balls and frozen to be placed in mushroom caps just before microwaving.
