Grecian Style Shrimp Scampi

Ingredients

2 Sticks butter
1 C Olive oil
1 t Salt
1 t Pepper
1 T Rosemary
1 t Oregano
2 T Paprika
4 Bay leaves

6 Garlic cloves, finely chopped
3 lbs Jumbo shrimp, peeled & deveined
1 lb Feta cheese, crumbled
1 C Finely crushed pork rinds
3 ozs Dry sherry

Directions

Preheat oven to 375F degrees.



Over low heat in saucepan melt butter, adding oil, salt, pepper, rosemary, oregano, paprika, bay leaves, garlic and sherry.



Place shrimp in large baking dish. Cover shrimp with feta cheese and top with crushed pork rinds.



Pour scampi sauce over shrimp and bake until shrimp are tender approximately 30 minutes.
