chicken breasts with spinach and sun-dried tomatoes in a mushroom-wine sauce

Ingredients

4 chicken breasts
4 slices of swiss cheese
1 box spinach, cooked and drained well
2Tbsp onion powder
1Tbsp chopped garlic
3Tbsp drained and copped oil packed sun dried tomatoes
2Tbsp parmesan cheese
pepper to taste.
For sauce:
2tsp butter
1 small onion, sliced.
1/2 lb white mushrooms, sliced.
1/4 C white wine
1/2 C chicken stock
1/4 C heavy cream
salt and pepper to taste

Directions

Preheat oven to 425 degrees. lay chicken breasts into roasting pan and cover with swiss cheese.

Mix cooked spinach. onion, garlic, sun-dried tomatoes, parmesan cheese and pepper. Top chicken with spinach mixture.

bake chicken for 45min or until done.



For sauce:

Melt butter in frying pan. Add remaining ingredients. Cook until mushrooms are done.

Serve sauce over cooked chicken
