Broccoli chesse casserole

Ingredients

7 oz fat free evaporated milk
1/2 cup old-fashioned oatmeal (not quick oats)
1/2 tsp sugar
2/3 cups shredded reduced fat cheddar cheese

2 large eggs
2 large egg whites, whipped until stiff peaks form
1 1/2 cups frozen chopped broccoli, thawed
1/2 tsp salt
1/4 tsp pepper

Directions

Preheat oven to 375 F. Spray a 1 1/2 quart casserole dish with cooking spray.



In a sauce pan over medium heat, heat milk, gradually add oatmeal and continue cooking until thickened, about 4-5 minutes. remove from heat and stir in cheese, sugar and pepper. stir until cheese is melted.

In a small bowl light beat 2 whole eggs. Add a small amount of milk mixture to egg mixture a stir well then stir egg mixture into the remaining milk mixture.



Fold whipped egg whites into milk mixture. Fold in broccoli and salt. Pour into casserole dish and bake for 40-45 minutes, or until set.
