Cauliflower Rice

Ingredients

Break up a head of cauliflower and trim off tough ends of the stems.

Soak pieces in salt water for 1/2 hour and rinse.

Steam cauliflower pieces until very tender and then drain off liquid completely.

Use a potatoe ricer (not a masher). Rice the steamed cauliflower until the consistency of rice.

The cauliflower rice can then be flavored or seasoned according to taste.
