Ingredients

CRUST:

2 C Almond flour
1/2 C Splenda
1/2 C Butter, very cold


TOPPING:

3 Eggs
1/2 C Butter, melted
1 C Splenda
1/2 C Fresh squeezed lemon juice
1 t Lemon zest

Directions

In a food processor, mix the flour, splenda, and cut up pieces of cold butter until just mealy.



Press mixture into the bottom of an 8 X 8 pyrex pan and bake at 350F degrees for 12 to 15 minutes. Cool slightly.



In a blender, mix all ingredients for the topping for about 45 seconds only.



Pour over pastry.



Bake at 350F degrees for about 20 to 25 minutes.



Do not brown the top. When cool, place in the freezer.



Put out for a few minutes at room temperature and cut into squares or fingers.



You can eat them right out of the freezer.
