Amaretto Cheesecake

Ingredients

2/3 C Almonds, crushed
3 T Splenda granular
5 T Butter
2 (8 oz) Cream cheese, softened
1/2 C Splenda granular
1/2 t Almond extract
1/4 t Salt

2 Eggs
3 T Davinci amaretto syrup
1 (8 oz) sour cream
1 T Splenda granular
1/2 t Almond extract
1 T Davinci amaretto syrup

Directions

Preheat oven to 350F.



In a medium bowl combine nuts, butter, and 3 tablespoons splenda. Mix well and press into the bottom of a 9 inch springform pan.



In a large bowl beat cream cheese and 1/2 cup splenda until smooth. Beat in almond extract and salt. Blend in the eggs, one at a time on low speed. Stir in 3 tablespoons amaretto syrup. Pour batter onto crust in springform pan.



Bake in preheated oven for 40 to 45 minutes or until golden brown and the filling is just set. Allow to cool completely.



Make the topping:



In a small bowl combine sour cream, 1 tablespoon splenda, 1 teaspoon almond extract and 1 tablespoon amaretto davinci syrup. Mix well and spread over the top of the cooled cheesecake.



Refrigerate overnight before removing from the springform pan.
