Alfredo Sauce

Ingredients

1 pint of heavy cream
5 oz of shredded romano cheese
1 egg yolk
1 stick of margarine or butter
1 T chopped parsley (optional)
salt and pepper to taste


Directions

Melt margarine/butter in a medium sauce pan on medium heat. Add all but 1/4 or so of the cream to the butter. Mix the remaining cream with the egg yolk in a separate bowl, mixing well. Pour the egg and cream mixture into the butter and cream mixture. Add cheese and parsley. Stir well and heat to near boiling. Add seasonings as desired. Note: The romano cheese usually has enough salt for my taste. You may like to add pepper for extra spiciness. This is a very low carb sauce and goes well with chicken.
