Cream of Celery Soup

Ingredients

1 Small bunch celery with leaves, finely chopped. Reserve a few leaves for garnishing
1 T Butter
1 Onion, chopped

4 1/2 C Chicken stock
1 1/2 C Heavy cream
Salt, celery salt and pepper to taste

Directions

Heat butter in a small soup pot. Add onion and stir over medium heat until softened. Add celery and cook over low heat stirring frequently, until celery is tender.



Puree soup in blender or food processor until smooth, working in small batches. Return pureed soup to pott and stir in cream. Season to taste with salt, celery salt, and pepper. Stir soup over medium heat until just heated through.



Serve immediately garnished with chopped celery leaves.

Additional Information

Make sure to cook the celery thoroughly before pureeing it to avoid any stringiness which would interfere with the soup's velvety texture.
