Tortilla Shells

Ingredients

1/3 CUP Atkin',s Bake Mix or other Flour substitute.
1/2 TSP lard or shortening
1/4 TSP baking powder
1/8 TSP salt
2 1/2 TBSP boiling water

Directions

1) Mix together the bake mix, baking powder, and salt.



2) Cut in shortening until the mix resembles corn meal.



3) Add water slowly, mixing with your hands to make a soft

dough. You may not need all the water.



4) Knead for a few minutes on a cool surface until elastic.



5) Lubricate bottom of dough with oil and put back in bowl.

Cover and allow dough to rest for 10 minutes.



6) Divide into golf ball size and roll out to desired size.



7) Cool on stove in cast iron grill or heavy skillet over

medium heat, until top is slightly bubbly then turn on opposite

side for a minute or two.



8) keep warm and stacked before serving.
