Ingredients

1 C Vanilla whey protein isolate, sifted well
2 t Baking powder, sifted
1/8 t Salt, sifted
1/2 t Cream of tartar, sifted
5 Eggs, separated
2 t Vanilla extract
1 T Lemon zest, finely grated
1 t Lemon extract
1/2 C Heavy cream
1/4 C Water
7 T Splenda

GLAZE:

2 oz Heavy cream
2 T Butter
1/2 t Vanilla extract
1/2 t Lemon extract
3 oz Cream cheese

Directions

Preheat oven to 300F degrees.



Spray a bundt pan with cooking spray very well.



Sift protein powder, baking powder, and salt and set aside.



In a large bowl, beat egg whites with cream of tartar until stiff.



In another bowl, beat egg yolks, splenda, extracts and lemon peel. Beat in water and cream, then beat in dry ingredients.



Fold into egg whites very very carefully, then spoon into a prepared bundt pan.



Bake for 45 minutes, then let cool 10 minutes before inverting and removing (this is tricky) from bundt pan.



GLAZE:



Beat cream, butter, cream cheese, and extracts well. Adding more cream 1 T at a time to desired thickness.



Drizzle the glaze over the completely cooled cake.
