Almond Cake

Ingredients

1 C Blanched almonds
2/3 C Splenda
1/2 C Low carb bake mix
2 T Dark rum

1 pinch salt
3 Eggs
Extra splenda for dusting cake

Directions

Preheat oven to 350F degrees.



Beat eggs with splenda until creamy and thick.



Grind almonds to fine powder in food processor.



Mix ground almonds with bake mix and salt. Add to eggs. Add in rum.



Stir just enough to blend.



Pour into an 8" X 12" baking pan lined with wax paper.



Bake for 25 to 30 minutes, until cake pulls away from sides of pan and springs back when pressed lightly with finger.



Turn upside down on cake rack.



Remove wax paper when cake is cool.



Sprinkle cake with a little splenda before serving.

Additional Information

Recipe makes a single layer cake.
