Ingredients

3 Egg yolks at room temperature
5 T Heavy cream
1 C Almond flour
1/4 t Salt
1 C Splenda
1 t Vanilla
2 t Baking powder
1 t Xanthan gum
FROSTING:

3 ozs Cream cheese, room temperature
1 Stick butter, softened
3/4 C Splenda
3/4 t Strawberry extract
Few drops of heavy cream
Few drops food coloring (4 colors)

Directions

Preheat oven to 375F degrees.



Beat eggs until thick and fluffy.



Gradually add splenda, beating well after each addition. Beat in heavy cream and vanilla.



Mix together almond flour, baking powder, and salt. Add to egg mixture and beat until smooth.



Spread in a greased and almond floured 12.5 X 10.5 inch jelly roll pan. Bake for 12 to 15 minutes.



When cool, cut into tiny squares or circles, decorate with frosting and garnish with edible flowers if desired.



TO MAKE FROSTING:



Mix cream cheese, butter, and splenda together until smooth and creamy.



Add extract and cream to smake a smooth spread. Divide among four small bowls, add a drop of food coloring (blue, red, green, and yellow) to each bowl. Mix well. Pipe a rosette of frosting onto each tiny cake.
