Vegetable Pancakes

Ingredients

1/2 C Almond flour
1 t Baking powder
1 t Salt
1/4 t Pepper
1 Egg

1/4 C Heavy cream
1 C Yellow squash, grated
1 C Zucchini, grated
4 Green onions, sliced
2 T Oil

Directions

In a mixing bowl, stir together the almond flour, baking powder, salt, and pepper.



In another bowl, beat together the egg, cream, zucchini, yellow squash, and green onions. Add this to the dry ingredients and stir until combined.



Using a large skillet, heat 1 T oil over medium heat. Pour batter by tablespoons into the pan, making a few pancakes at a time. Cook about 2 minutes on each side until golden brown.



Add the remaining oil to the pan as needed.



Serve pancakes at once with some sour cream.
