Mushroom Quiche

Ingredients

8 eggs
1 cup heavy cream
8 oz sliced mushrooms
1/4 onion, chopped
8 oz cheddar cheese, shredded

Directions

In saute pan, saute mushrooms and onions until mushrooms are cooked, and onions are translucent.



With mixer, whip eggs and cream until very thick and butter colored.



Stir in mushroom/onion mixture. Stir in 1/2 the cheese. Pour into a lightly greased pie pan or 8 inch square pan and top with remaining cheese.



Bake at 350 degrees for 40 minutes or until set (there may be a slight amount of jiggle near the center). Allow to sit for 5 minutes to complete cooking.
