Marys Cauliflower Casserole

Ingredients

1 Medium head cauliflower, cut into 2 inch pieces
1 1/2 C Sour cream
2 C Shredded cheddar cheese
1/2 C Pork rinds, crushed
1/4 C Green pepper, chopped

1/4 C Red bell pepper, chopped
1/4 C Freshly grated parmesan cheese
1/4 t Salt
1/2 t Paprika

Directions

Place cauliflower in a saucepan with 1/2 cup of water. Cover and bring to a boil and cook 4 to 5 minutes or until crisp bt tender. Drain.



Combine cooked cauliflower, sour cream, cheddar cheese, crushed pork rinds, bell peppers, and salt.



Transfer to a 2 quart baking dish sprayed with cooking spray.



Sprinkle with the parmesan cheese and paprika.



Bake uncovered at 325F degrees until heated through and golden brown.
