Chocolate Chunk Cookies

Ingredients

1 1/2 C Almond flour
1/2 t Baking soda
1/2 t Salt
1 1/3 t Xanthan gum
1/2 C Butter
5/8 C Splenda
5/8 C Brown sugar twin

1 Egg
1 1/2 t Vanilla
1 C Low carb milk chocolate broken into small chunks

Directions

Preheat oven to 375F degrees.



Mix first 4 ingredients in a bowl and set aside.



With mixer, cream butter, splenda, and brown sugar twin until smooth. Add in the egg and vanilla.



Add the dry ingredients to the butter mixture and mix.



Stir in chocolate chunks.



Use a round measuring tablespoon or cookie scoop to make dough into round balls and lay 2 inches apart on cookie sheet.



Bake 10 to 12 minutes or until centers are set and very lightly browned.



Cool 2 to 3 minutes before removing from the baking sheet.
